Beyond the Boerewors: 5 Braai Broodjie Twists You Have to Try

Let’s be honest: the humble braai broodjie is the unsung hero of the campsite. While everyone is fighting over who turns the chops or checking if the chicken is done, the broodjies sit patiently on the grid, getting golden and gooey.
We all know the standard protocol: white bread, cheddar cheese, tomato, onion, and a dash of salt and pepper. It’s a classic for a reason. But sometimes, you need to elevate your game. Whether you are trying to impress the in-laws or just want to treat your tastebuds after a long day of hiking, these five twists on the classic South African staple will change your life.
Grab your grid—it’s time to get cooking.
1. The "Fancy Pants" (Brie & Fig)
This is for when you’re glamping, or just feeling a bit posh in the bush. The sweetness of the preserve cuts through the rich cheese perfectly.
Bread: Sourdough or Ciabatta slices.
Filling: Sliced Brie cheese (don’t be shy), green fig preserve (or onion marmalade), and fresh rocket (add the rocket after it comes off the fire).
Something missing?: You can never go wrong with not adding some biltong! Especially with this deadly combination.
2. The "Bokke" Special (Biltong & Chutney)
A patriotic combo that hits every savory note you crave. It’s essentially a steak dinner inside two slices of bread.
Bread: Standard white bread (it crisps the best).
Filling: Shaved wet biltong (fat on), sharp cheddar cheese, and a generous layer of Mrs. Ball’s Chutney.
Pro Tip: Add a layer of cream cheese to stop the bread from getting soggy from the chutney.
3. The "Breakfast" Broodjie
Who says braaing is only for dinner? If you have coals left over from the night before (or get the fire going early for coffee), this is the champion of breakfasts.
Bread: Wholewheat.
Filling: Scrambled egg (cooked beforehand, slightly runny), crispy bacon bits, and mozzarella.
Verdict: Best enjoyed with a tin mug of condensed milk coffee.
4. The "Sweetie" (Dessert Broodjie)
Wait, hear us out. Once the savory food is done, wipe down the grid and throw these on for the kids (and the adults who refuse to grow up).
Bread: White bread or Brioche.
Filling: Nutella spread, sliced bananas, and mini marshmallows.
Verdict: It’s basically a campfire crepe. Be careful—the filling gets molten hot!
5. The "Jalapeño Popper"
For those who like a bit of a kick. This mimics the famous starter but in sandwich form.
Bread: White bread.
Filling: Cream cheese, chopped pickled jalapeños, cheddar, and bacon bits.
Verdict: The perfect companion to an ice-cold beer.
The Secret Hack: The "Outside" Chutney
Most people butter the outside of their bread to prevent burning. But if you want that sticky, caramelized, golden-brown crunch that makes people ask for your secret recipe, try this: Spread a thin layer of mayonnaise or chutney on the outside of the bread instead of butter. Mayonnaise has a higher smoke point than butter (so it burns less easily) and creates an incredible crunch. Chutney on the outside caramelizes into a sticky glaze—just watch it closely so the sugar doesn't burn!
